Sorry for the overload on chocolatey goodness lately, but who doesn't love chocolate anyways?
What you'll need:

  • 1 cup of chocolate cookie crumbs (20 chocolate cookies)
  • 2 tablespoons of butter
  • 2 packages of cream cheese (softened)
  • 1.5 cups of sugar
  • 2/3 cups of cocoa powder
  • 1 teaspoon of vanilla 
  • 4 eggs
  • 2 packages (6oz) of raspberries

To make the crust:

1) Crush cookie crumbs in a plastic bag to make 1 cup of fine crumbs

2) Put crumbs in a medium sized bowl and mix in butter

3) Press the mix into a 9 inch pan and bake for 5 mins

To make the cake:

1) Beat cream cheese in a large bowl with the mixer

2) Beat in sugar, cocoa, vanilla and start at low speed and work up to high speed

3) Beat in eggs, one at a time

4) Stir in 1 cup of raspberries

5) Poor mix in a pan

6) Bake 60-70 mins

7) Turn off oven and leave it for one hour

8) Cover and chill for 8 hours

9) Top with raspberries
